Peanut Brittle

1 1/2 cups white sugar
3/4 cup white corn syrup
1/2 cup water
1/2 to 1 stick butter
2 1/4 cups raw peanuts
1 heaping teaspoon soda
1 teaspoon vanilla
1 teaspoon water

Combine sugar, corn syrup and water and cook, stirring constantly, to 240° F.

Add butter and peanuts; cook over medium-high heat, in a heavy saucepan, to 300 degrees, stirring constantly.

Combine soda, vanilla and water; set aside.

Remove pan from stove and stir in the soda mixture.

Mix (this will foam up) and pour immediately into a cookie sheet with sides, that has been greased with butter or Crisco.

Let cool. Break into pieces.

Store in covered container in cool place.

Try substituting pecan pieces or cashews for peanuts.
