Buckeyes

1 (28oz. jar) JIF peanut
1lb. box 10x Powdered Sugar
1 tsp. vanilla
1 whole stick margarine (1/2 cup)
12oz. bag chocolate chips
2 T. shortening
Toothpicks
Waxed paper


Mix together first four ingredients and roll into 1" balls.

Place on waxed paper lined jellyroll pan.

Continue rolling dough into balls until all dough is used.

Place in freezer.

Place chocolate chips and shortening in a microwave safe dish.

Set for 90 seconds and stir until completely melted.

If not melted continue using 10 second intervals stirring after each try.

Take toothpick and stick in center of ball.

Dip each peanut butter ball into chocolate coating until just before top is completely covered, leaving a spot of peanut butter showing.

Place back on wax paper, and refreeze.

Remove toothpicks and smooth over toothpick hole.

Finished Buckeyes can be stored in freezer bags.

After all buckeyes have been completely frozen remove from pan and place in freezer bags.
