posted by bionicgal 06-10-98 6:42 AM BUTTER MINTS no need to refrigerate these 2 Tblsp melted butter 1 egg white (recommend reconstituted dry eggwhite powder since this isn't cooked) 3 cp powdered sugar 1/2 tsp peppermint extract (or desired flavor) Mix all ingredients together and knead until smooth, adding more powdered sugar as needed to make a non-sticky mix that holds its shape when molded. Roll into balls to fit mold and dip in granulated sugar and press into molds as above or press with tines of forks to make flat mints.
