CHOCOLATE RUM BALLS

Chocolate Cake:
3/4 c. butter or margarine
1-3/4 c. sugar
2 eggs
1 tsp. vanilla
2 c. all-purpose flour
3/4 c. cocoa
1-1/4 tsp. baking soda
1-1/3 c. water
1/2 tsp. salt

Butter Cream:
2-2/3 c. confectioners sugar
1/3 c. milk
1 tsp. vanilla
1/2 c. cocoa
rum flavor to taste

Cream butter or margarine and sugar. Add eggs and vanilla; beat 1 minute at medium speed. Combine flour, cocoa, baking soda and salt. Add flour mixture gradually with water to creamed mixture. Pour batter into 13x9-2-inch greased pan. Bake at 350 degrees for 35 to 40 minutes.


Butter Cream:

Cream butter; add cocoa and confectioners' sugar; gradually add milk. Add vanilla and rum flavor to taste. Let cake cool completely; crumble into mixing bowl. Add 3/4 cup butter cream or more if needed. Form into balls, then roll in chocolate jimmies, coconut, or cocoa powder. Then refrigerate. Makes 24.

***Note: You may dip them in melted chocolate before rolling in your choice of toppings.
