Chocolate Seafoam

2 cups light brown sugar, packed
3/4 cup cold water
1/2 cup Hershey's chocolate syrup
2 egg whites
2 tsp. vanilla
1 square (1 oz) Hershey’sŪ baking chocolate, melted
1/2 cup nuts


Mix together the sugar, water and chocolate syrup in a 3 quart saucepan. Cook over medium heat stirring constantly until sugar dissolves, and mixture boils.

Then allow to cook without stirring to the hard ball stage 250°. Remove from heat. Immediately beat egg whites until stiff.

Pour hot syrup in a thin stream over beaten egg whites, beating constantly at high speed of an electric mixer.

Continue beating until peaks form when dropped from spoon, about 10 minutes.

Quickly stir in by hand the vanilla and melted chocolate. Blend in nuts. Drop by teaspoonfuls onto waxed paper and allow to cool.

3 to 4 dozen pieces
