Sweet and Simple Chocolate Coating

3 cups of semi sweet chocolate pieces
1/4 cup shortening (do not substitute)


In a large 4 cup glass measure, or a 1 1/2 quart glass mixing bowl, stir together the chocolate chips and shortening and set aside.

In a large glass mixing bowl, pour very warm water (100F to 110F) to a depth of 1 inch. Place glass measure or bowl containing the chocolate mixture inside the large bowl. The water should cover the bottom half of the measure or bowl containing the chocolate mixture. Stir the chocolate mixture constantly with a rubber spatula until the chocolate is completely melted and the mixture is smooth. This will take about 20 minutes, do not rush. If the water begins to cool, remove the bowl containing the chocolate mixture. Throw out the cooled water and add more warm water. Return the bowl with the chocolate mixture to the bowl with the warm water. Be very careful not to get any water into the chocolate mixture. Even one drop can cause the chocolate to become dull and gummy. If this does happen, stir in additional shortening, 1 teaspoon at a time, until the mixture becomes shiny and smooth again.

Using a fork or chocolate dipper, dip the desired candy one at a time, into the melted chocolate mixture as directed in the candy recipe. Continue as directed. If the chocolate becomes to thick while dipping, remove the glass measure with chocolate from the one with the water and replace the water as before. Stir the chocolate mixture until it reaches a dipping consistency and continue dipping. Store the completed candy in an air tight container at between 65F and 70F.
