Coconut Mounds

2/3 cup Sweetened Condensed Milk (5 oz.)
2 cup Powdered Sugar
1 tsp Vanilla Extract
12-14 oz Shredded Coconut
1 pkg Roasted Almonds (optional)
12 oz. (1 bag) semi-sweet chocolate chips
1 Tbl. butter


Bring all ingredients to room temperature.

In a small bowl mix together the vanilla and condensed milk.

Add the powdered sugar 1/2 cup at a time, blend until smooth. Add the coconut, blend until evenly distributed.

Form into small (or large) balls and refrigerate until ready to dip.

**If using almonds, form a ball of the candy mixture around an almond.

Melt chocolate chips and butter according to package directions.

To coat - dip cooled balls of candy into melted chocolate and set on wax paper or foil lined cookie sheets, or plates, or whatever you can find.

Let stand 30 minutes to an hour before covering. Let stand room temperature overnight, or refrigerate to set chocolate.
