DIVINITY

2-2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water (but reduce by 1 tablespoon in humid weather)
2 egg whites
1 teaspoon vanilla extract
2/3 cup chopped nuts

In large saucepan, heat sugar, corn syrup, and water over low heat, stirring constantly until sugar is dissolved. Cook without stirring to 260 °F (127 °C).

Remove from heat. Meanwhile, beat egg whites to stiff peaks. Continue beating as you pour a thin stream of hot syrup into egg whites. Add vanilla.

Beat until mixture holds its shape and becomes slightly dull. Fold in nuts. Use buttered spoons to drop onto waxed paper. Press half a nut into each candy, if desired. Makes about 4 dozen.
