Brown Sugar-Black Walnut Fudge

2 tablespoons butter
2 cups firmly packed light brown sugar
1/4 teaspoon salt
3/4 cup half and half
1/2 teaspoon vanilla
3/4 cup coarsely chopped black walnuts


In a medium, heavy saucepan, melt the butter over low heat. Add the brown sugar, salt, and half and half, and stir until the sugar dissolves. Raise heat to medium and bring to a boil. Boil until the mixture reaches the soft ball stage, 234°F. on a candy thermometer.

Remove the pan from the heat and allow to cool to lukewarm. Stir in the vanilla and beat with a heavy spoon until thick and creamy. Stir in the nuts. Pour the mixture into a lightly oiled or nonstick 8-inch square baking pan. When firm but not hard, cut the fudge into 1-inch squares. Pack into a wax paper-lined airtight container with wax paper between layers and store in a cool place.

Makes about 1 pound
