Fudge Non Chocolate

INREDIENTS:

225g/8oz butter
900g/2lb granulated(white)sugar
1 large can evaporated milk(411g)
half the milk tin of water

place all ingredients in a large heavy saucepan.
stir gently over a low heat until the sugar is melted
Bring to the boil and boil steadily until thermometer
reaches238-240 degrees farenheight,116 celsius or soft ball stage.

Remove from heat,dip base of pan in cold water to stop cooking.Leave for 5 minutes.Beat with a wooden spoon until the mixture loses it's gloss,looks grainy,thickens a little and will just pour from the pan.

Pour into a buttered or oiled shallow tin;30 by 20cm is suitable.Leave until cool and nearly set.Cut into
squares.
