SOUTHERN PECAN FONDANT
1 cup water
3 cups sugar
2 tablespoons butter
1/2 teaspoon salt
1 teaspoon vanilla
2 cups pecans, chopped
Combine water and sugar in heavy saucepan. Cook to 234 °F on candy thermometer. Remove from heat and let cool to 110 °F (lukewarm). Beat until candy becomes stiff and loses its glossiness.
Add butter, salt, vanilla, and pecans. Mix thoroughly. Pour into buttered pan which is atleast 1/2-inch deep. Cut into squares when cool.
