Marzipan
1 pound scalded ground almonds
1 pound icing sugar
3 whites of egg.
Knead sugar, almonds and egg-whites into a pliant dough. Can be used as sweets, in cakes, or as decoration, shaped into flowers or fruit and colored with confectioner's coloring. Marzipan pigs are very popular at Christmas time.
