Microwave Divinity
2 c sugar
1/3 c water
1/3 c light corn syrup
1/4 tsp salt
2 egg whites
1 tsp vanilla
1/2 c chopped nuts
Combine sugar, water, corn syrup and salt in 2 qt. casserole. Microwave on high for 5 minutes. Stir well. Microwave uncovered at high (100%) until a hard ball forms when a small amount is dropped in cold water, about 6 min. Cool 3 to 4 min. Beat egg whites until very stiff. Pour sugar mixture in a steady stream over egg whites, beating constantly until mixture holds its shape and starts to lose its gloss. Stir in vanilla and nuts. Drop by teaspoonfuls onto waxed paper. Makes about 3 dozen.
