Mock Cherry Ripe Balls

1/2 pound butter
1 pound powdered sugar
1 pound flaked coconut
1/2 cup sweetened condensed milk
1 cup chopped walnuts
1 teaspoon vanilla
8 oz jar maraschino cherries, chopped and well drained
Chocolate coating
12 oz chocolate chips, we prefer milk chocolate
4 ounces unsweetened chocolate squares
2 inch by 1 inch by 1/2 in piece of paraffin wax.


In mixing bowl cream together butter and sugar, add coconut, milk, walnuts, cherries and vanilla. Stir until blended. Chill until slightly firm. Roll into walnut sized balls.Place balls on cookie sheet and freeze. Melt chocolates and paraffin together, either in a double boiler or microwave. Using toothpick as handles dip frozen balls into chocolate mixture. Chill until firm. You may need to reheat chocolate if you are not using a double boiler. yield about 7 dozen. These sound like more work than they really are and they are very good.
