Peanut Butter Cups
Amount Measure Ingredient -- Preparation Method

2 cups milk chocolate chips
2 tablespoons shortening
2 dozen 1-inch paper candy cups
3/4 cup creamy peanut butter
3/4 cup powdered sugar -- sifted
1 tablespoon butter -- melted
For chocolate cups, combine over hot water, chocolate
chips and for each. Place candy cups in the palm of your hand; rotate gently, using the back of a spoon to push the chocolate up the sides. Chill until firm (15-20) minutes.
For filling, combine peanut butter, powdered sugar, and butter; mix until well blended. Using slightly rounded teaspoonfuls, shape peanut butter filling into balls. Place 1 ball into each chilled cup and press lightly with fingers to flatten. Spoon 1 teaspoon of melted chocolate mixture on top of each cup and smooth over to seal.
Chill until firm (about 45 minutes).
Store in an airtight container in the refrigerator.
