Peanut Butter Cups
the Silver Palate Cookbook
3/4 cup brown sugar
1 pound confectioners' sugar
8 Tblsp (1/4 pound) sweet butter
2 cups peanut butter
1 cup unsalted peanuts
12 ounces semisweet chocolate chips
1 Tblsp sweet butter
Mix first 5 ingredients together. Pat into an ungreased jelly roll pan, about 15x10 and 1 inch deep. Flatten top with a rolling pin.
Melt chocolate chips and butter in the top part of a double boiler over simmering water. Spread chocolate on peanut butter mixture.
Cut into bite-size squares. Chill for 15-20 minutes. Remove from pan and serve chilled.
Makes 50 or more bites.
