The Pumpkin Book (from the HMB Pumpkin Festival)
Pumpkin Fondant
1/2 cup cooked mashed pumpkin or canned pumpkin
2 cups sifted powdered sugar
1/4 tsp orange extract (or rum, vanilla, maple, lemon or other)
1/2 cup shredded coconut or chopped nuts
Melted chocolate chips for dipping
Mix together first 4 ingredients. Place bowl over (not in) a pan of hot water for 10 to 15 minutes. Chill for several
hours in refrigerator. Knead with hands until smooth and creamy. Shape into small balls (teaspoon size) and dip in
melted chocolate, using fork. Cool.
