Sesame seed brittle

Ingredients:-
1 1/2 cups sugar
1/4 cup water
1/2 cup honey
2 cups sesame seeds

Method:-
1. Grease a 26cm x 32cm (10" x 12") Swiss roll pan. (jelly roll) Cover base with baking paper. Combine sugar, water and honey in a medium pan, stir over heat, without boiling, until sugar is dissolved. Brush sugar crystals from sides of pan with brush dipped in water.

2. Boil, uncovered, without stirring, until mixture reaches soft ball stage, 116*C, ( approx 245*F) on a candy thermometer. A teaspoon of the mixture will form a soft ball when dropped into a cup of cold water.

3. Allow bubbles to subside, gently stirring in the sesame seeds. Return mixture to the boil, simmer, without stirring until mixture reaches small crack stage. 138*C ( approx 285*F) on a candy thermometer (syrup forms a fine thread when dropped into cold water and can be snapped with the fingers)

4. Allow bubbles to subside. Pour mixture into the prepared pan. Stand for 10 minutes, mark into desired shapes. When cold break into pieces.
