Old Fashioned Sponge Candy

1 cup dark Karo syrup
1 cup sugar
1 Tbsp. sifted baking soda
1 Tbsp. vinegar
1 lb. chocolate waters (light or dark according to taste)


Add sugar, corn syrup and vinegar to a very clean frying pan. Stir over high heat only until mixture dissolves. Continue heating without stirring until mixture reaches 300° F. Remove from heat and sprinkle baking soda onto mixture. Quickly blend baking soda into the mixture with a fork. The candy will turn yellow and expand.

Pour into a buttered 9 x 9-inch pan and allow to cool. Cut or break into pieces and dip into melted chocolate.

Makes 1 3/4 pounds.
