NOTES : For Vegetarian Sauce, substitute 1 med. eggplant, finely chopped, or 3/4 lb portobello mushrooms, finely chopped, for ground chuck. Increase wine to 1 cup; omit beef broth.

Caribbean Tomato Sauce

3 large tomatoes
3/4 cup canned black beans -- drained and rinsed
2 tablespoons extra-virgin olive oil
3 cloves garlic -- pressed
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh chives
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1/4 teaspoon ground red pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Monterey jack cheese

Peel tomatoes; coarsely chop over deep bowl, reserving juice. Combine all ingred. and let stand at room temp. at least 1 hr. Serve over 4 ounces of cooked vermicelli and sprinkle with cheese.
