Connie’s Tortilla Casserole 
1 1/2 pounds ground beef 
1 medium onion, chopped 
salt and pepper to taste 
1 Tbls. chili powder 
1 cup tomato sauce 
10 - 12 corn tortillas 
1 cup chopped olives 
1 1/2 cups grated cheddar cheese 
1 cup water 
Preheat oven to 400° F and grease a casserole dish.
Brown meat and onion, add seasonings and tomato sauce. 
In a greased oven-proof casserole dish alternate layers of tortillas, meat sauce, olives and cheese; add cup of water. 
Cover with lid or foil and bake at 400 degrees for 20 minutes. 
Variation: add a can of refried beans after browning meat. 
Diced canned chilies are also an optional addition.
