Creamy Chicken Rice Casserole

1 (6 oz) pkg long-grain and wild rice mix 
3 cups chopped cooked chicken, 3-4 cups 
1 small onion, chopped 
1 (2 oz) jar diced pimento, drained 
1 (16 oz) pkg frozen French-style green beans, thawed 
1 (6 oz) jar sliced mushrooms, drained 
1 (8 oz) can sliced water chestnuts, drained 
1 (10.75 oz) can cream of celery soup, undiluted 
1 (8 oz) sour cream 
1/2 teaspoon salt 
1/2 teaspoon pepper 
1 cup shredded Swiss cheese, 4 oz 
Cook rice according to package directions. 
Preheat oven to 350° F.
Combine rice and next 10 ingredients; spoon into a shallow 3 quart baking dish; top with cheese. 
Bake for 30 minutes or until bubbly around edges. 
Yield: 6 to 8 servings 
NOTE: Casserole may be frozen up to 1 month. 
Thaw in refrigerator 24 hours; let stand at room temperature before baking
