Hot Chicken Salad

2 c. diced cooked chicken
1 c. chopped celery
1 can sliced water chestnuts
1 can sliced mushrooms
1/2 c. mayonnaise
1/2 tsp. salt
1 tsp. lemon juice
2 tsp. grated onion
1/2 c. sliced almonds
1 c. crushed potato chips
1/2 c. shredded Cheddar cheese


Combine chicken, celery, water chestnuts, mushrooms, mayonnaise, salt, lemon juice, grated onion and sliced almonds. Mix well then put in 9 x 13-inch buttered casserole dish. Sprinkle top with chips and cheese. Bake at 400 degrees for 10 minutes. Serve on lettuce leaf.



Hot Chicken Salad

1/2 c. mayonnaise
2 Tbsp. lemon juice
1 Tbsp. minced onion
2 c. or more diced cooked chicken
1 c. diced celery
1/2 c. toasted slivered almonds
1 small can sliced water chestnuts, drained
1 small can mushrooms, drained
1 pt. sour cream
1/2 c. grated cheese
potato chips - amount to taste


Mix mayonnaise, lemon juice, minced onion, chicken, celery, toasted slivered almonds, water chestnuts and mushrooms and place in 9 x 13-inch baking dish. Cover with layer of sour cream, then 1/2 cup grated cheese and top with desired amount of crushed potato chips. Bake at 400 degrees for 15 to 20 minutes or until hot.
