Tator Tot Ham Scramble

2 1/2 cups frozen tator tots or cubed hashbrown potatoes
1 cup chopped fully cooked ham
1/4 cup chopped onion
1/4 cup green pepper
2 Tablespoons oil
4 eggs, beaten
Salt and pepper, to taste
Cheddar or American Cheese
In a large skillet, cook potatoes, ham, onion, and green pepper in oil over medium heat for 8-10 minutes or until browned, stirring constantly.
If using tator tots, break apart with spatula; mix well.
Add eggs; cook and stir until eggs are completely set.
Turn heat down, if needed.
Season with salt and pepper.
Sprinkle with cheese and let it melt a bit.
Serve immediately.
Serving Ideas : Serve with buttered toast and orange juice or a fruit smoothie.
