Gina Goes Mexican (dip or casserole)

Here is one that is quick and delicious. I have served it at parties as a dip sort of thing but it is really a cassarole.

1 large can refried beans
1 lb browned ground beef or turkey
1 small can chopped green chilies
About a cup and a half of your favorite salsa
1 small can chopped black olives
1 bunch of green onions chopped (or less if your not an onion person)

Layer this in the order above in a casserole dish. Top with enough shredded cheese to cover, I use a sharp cheddar.

Bake at 350 for 30 minutes or until heated through.

Serve with sour cream, guacamole, diced tomatoes and Fritos corn chips. You can get fancy and put the guacamole in the center then ring it with the sour cream and tomatoes but it reheats better if you leave them on the side.

Also if you like it hot or mild you just adjust how much chili pepper you use and the type of salsa. This is really quick if you do like I do.

I buy 2-3 lbs of ground beef at a time and brown it then freeze it into smaller amounts. Then just thaw it and throw it in. Let me know if you like it.
