Fiesta Brunch Casserole  
7 ounces canned chopped green chilies, drained 
3 (6-inch) corn tortillas 
1/2 pound hot Italian sausage 
2 cups Monterey Jack cheese 
4 eggs
1 1/2 cup milk
1/4 tablespoon salt 
1/4 teaspoon garlic powder 
1/4 teaspoon onion powder 
1/4 teaspoon cumin 
1/4 teaspoon pepper 
1 tomato 
Grease a 8x8x2 pan. 
Cook and drain sausage. 
Spread half of drained chilies into bottom of pan. 
Slice tortillas into 1/2" strips; lay half over chilies. 
Top with 1/2 sausage, and 1/2 of cheese; repeat layers. 
In a bowl, beat together eggs, milk and spices; pour over cheese. 
Slice tomato and lay on top. 
Cover and chill overnight. 
Preheat oven to 350 degrees. 
Uncover casserole and bake 30-45 minutes or until set in center and edges are lightly browned. 
Serve with or without sour cream and salsa.
