Loco Grande Burrito (From El Pollo Loco Restaurants)

1 12 inch flour tortilla 
2 heaping tbsp fat free cheddar cheese -- shredded 
1/3 cup Spanish Rice -- see recipe here 
1/3 cup pinto beans 
1/3 cup chicken -- diced/skinless 
1 tbsp guacamole 
1/4 cup iceberg lettuce -- shredded 
1/4 cup tomato -- diced 
pinch cilantro -- chopped 
SPANISH RICE 
1 1/2 cups water 
1 cup converted rice -- not instant 
1 cup tomato sauce 
1 1/2 tbsp onion -- finely minced 
2 tsp green bell pepper -- finely minced 
2 tsp red bell pepper -- finely minced 
1/2 tsp salt 
1/2 tsp chili powder 
1/4 tsp oregano 
To make burrito, steam the tortilla in a steamer, or in a moist towel in the microwave for 20 seconds on HIGH. 
Build the burrito of your choice by arranging the ingredients across the center of a tortilla in the order listed. Leave
room at each end for folding/ 
To fold, turn the left and right ends of the tortilla over the filling. Fold the bottom of the tortilla up over the
ingredients, then continue rolling the burrito up into a tight package. Serves 1. 
For the Spanish Rice: Combine all the ingredients in a medium saucepan over high heat. 
Bring the mixture to a boil, then reduce the heat and simmer the rice for 20-25 minutes, or until the rice is tender.
Serves 4.

NOTES : I garnished with cilantro, extra chopped avocado, and a cheesy rice dish that I put in a biscuit cutter to
make it stand up like they do at the restaurants. I also had sour cream on the side and salsa.
