Mom's Lo-Carb Cheesy Salsa Casserole

1 tablespoon butter or margarine
6 tablespoons salsa
1/2 cup chopped onion
1 clove garlic, minced
8 ounces shredded cheese
3 eggs
3/4 cup sour cream
2 teaspoons chopped fresh cilantro
1 teaspoon or more Santa Fe Spice Blend


Spray an 8" square pan with cooking spray. Preheat oven to 350 degrees F.

Melt butter in a small skillet. Saute onion and garlic until softened. Spoon into prepared pan. Spoon salsa over onions evenly, then sprinkle with cheese.

Beat the eggs and sour cream until well blended. Add remaining ingredients to eggs and mix well. Pour evenly over cheese. Bake at 350 for 35-45 minutes.
