Tortilla Vegetable Casserole 
Saute: 
3-4 zucchini 
onion 
green pepper 
Stir in 7-oz can diced green chilies, salt, pepper and 
ground cumin to taste 
6 corn or flour tortillas-cut each into 6 wedges. 
2T. flour blend flour into sour cream. 
1 c. sour cream 
3 c. shredded cheese 
in a 2 qt. casserole layer 1/2 tortillas, half of vegies, 1/2 sour cream, and half the cheese. Repeat layer. Bake
uncovered at 350 for 30 minutes, until bubbly.
