Baked Orzo with Shrimp and Feta
1 pint cherry tomatoes, quartered
2 tablespoons chopped fresh dill
1 teaspoon extra-virgin olive oil
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
8 ounces (1 1/2 cups) orzo pasta, cooked according to package directions
1 package (10 oz.) frozen chopped spinach, squeezed dry
10 ounces medium shrimp, cooked and peeled
1/2 cup (2 oz.) feta cheese, crumbled
1 tablespoon freshly grated Parmesan cheese
Combine tomatoes, dill, oil, garlic, salt and pepper in large bowl. Let stand 10 minutes.
Stir in orzo, then add spinach, shrimp, feta cheese and Parmesan. Spoon into shallow 1 1/2-quart microwaveable casserole. Cover and microwave on High 5 minutes or until heated through.
Serves 4
