Perogie Casserole (Tastes like pierogies without the hassle)
8 lasagna noodles cooked well
3/4 lb. sharp cheddar cheese, shredded
10 medium potatoes peeled, sliced and cooked until soft
1/2 stick margarine
3 medium sweet onions sliced 1/4 inch thick
(Sauerkraut is optional drain well and mix with potatoes also)
(You can subsitute the frozen mashed potatoes for this also Read the pkg and see what the equivalent is to 10
potatoes and adjust)
Saute onions in butter and set aside.
Cook noodles and set aside.
Cook or heat up potatoes and add cheese while hot. (easier to spread
if hot)
IN a 9x13 inch baking pan, spray with non stick spray. Layer as follows:
4 noodles to cover bottom
1/2 the potatoes
1/2 the onions
Repeat ending with onions covering the top completely. Cover with foil and bake in a 350 oven for 40 minutes.
You will be surprised how good these are and how much like pierogies they taste.
