Pasta Tortellini Baked Cheese

Baked Cheese Tortellini

2 pkgs. (9 oz. each) fresh cheese tortellini or ravioli (I used DiGiorno mozzarella garlic tortellini)
8 to 16 oz. fresh mushrooms, wiped clean and quartered (optional)
¼ c. melted margarine or butter, or more if desired
½ c. Italian style dry bread crumbs
¼ c. shredded Parmesan cheese
salt (optional) and pepper to taste
2 T. chopped parsley

Heat oven to 400 degrees. Spray a 9x13 pan with Pam. In a small bowl combine bread crumbs, Parmesan, salt, pepper, and parsley. Set aside.

Saute mushrooms in butter in large skillet for a few minutes until crisp tender. Meanwhile, cook tortellini in lightly boiling water for 4 to 5 minutes; drain.

Remove mushrooms from the heat and add tortellini; toss together. Pour in prepared pan. Sprinkle bread crumb mixture over pasta and mushrooms. (It can all be mixed together, if desired).

Bake 15 to 20 minutes until top is golden. Yield: about 6 servings
