Pork on Spanish Rice 
The Lilley version 
1 cup uncooked rice 
1/2 cup chopped green pepper 
1/2 cup chopped onion 
1 tsp. minced garlic 
1/3 of an 8 oz. can of water chestnuts, coarsely chopped 
1/2 tsp. salt 
freshly ground pepper to taste 
8 oz. tomato sauce 
1 qt. whole tomatoes with liquid (squished) 
Mix all together in a large casserole. Place 4-6 pork chops on top of rice mixture. Season pork with garlic salt and freshly ground pepper. Bake at 350* for 45-60 minutes. 
Serves 4-6..
