1 (3 pound chicken), cut up
Salt, to taste
1 teaspoon oregano
1 clove garlic, minced
2 tablespoons oil
1/3 cup ham, diced, cooked
1 onion, diced
2 tomato, chopped
1 green peppers, chopped
1 tablespoon capers
1/4 cup stuffed green olives, diced
2 cups rice, uncooked
1 cup peas, cooked
1 1/2 quarts chicken stock
1/2 cup Parmesan cheese, freshly grated
Mix salt, oregano and garlic together and rub it onto chicken pieces.
Preheat oil in heavy saucepan.
Brown chicken, then add diced ham, onion, tomatoes and green pepper.
Lower heat, cover and simmer for 30 minutes.
Remove pan from heat.
When chicken is cool enough to touch, remove meat from bone and replace it in pot.
Add 1 1/2 quarts chicken stock, capers and olives and cook for 5 minutes.
Add rice, stir and simmer until rice is tender but slightly moist.
Serve at once, garnished with peas, pimentos and cheese.
