  CASHEW CHICKEN CASSEROLE 
  1/2 c. chopped onions 
  1 c. chopped celery 
  2 T. margarine 
  3/4 c. chicken broth 
  3 T. soy sauce 
  4 c. chopped cooked chicken 
  2 cans cream of mushroom soup 
  3 c. cooked rice 
  1 large can chow mein noodles 
  1 c. unsalted cashews 
  Preheat oven to 350 degrees. Saute onions and celery in margine for 5 minutes. Add chicken broth and soy sauce. Simmer for 2 minutes. Add the cooked chicken, mushroom soup, and cooked rice. Turn into 9x13 pan. Bake for 15-20 minutes. Remove and top with chow mein noodles and cashews. Return to oven for 5 minutes.
