Poultry Chicken Curry Rice

Chicken Curry Rice (Serves two)

1/2 lb. chicken,pork or beef cut into cubes
Group 1:1/4 tsp salt
1 tbsp each cooking wine or sherry,cornstarch.
1/2 tbsp curry powder (end of group one)
6 Tablespoons of oil

Group 2: 1/2 cup onion cubed
3 Tablespoon curry powder or curry paste
5 Tablespoons flour (end of group two)

Group three: 1-1/2 cup potato cubed
1 cup carrot cubed (end of group three)

Group four: 1/2 tablespoon sugar
3 cup chicken broth or water
1 tsp salt
1 tablespoon cooking wine or sherry
2 cups cooked rice

Marinate the meat in group one

Heat the 6 tablespoons of oil in a preheated wok. Fry the onion of group two until fragrant and golden. Add the curry powder and flour and stir fry briefly,add groups three and four bring to a boil .

Simmer over low heat for 15 minutes. Stir frequently while cooking to prevent sticking. Finally add the meat and cook several minutes until the meat is cooked through.

Put half the rice on each of two serving plates and top with the curry mixture. Serve.
