Spicy Chicken Skillet

1 tbsp vegetable oil
1 lb boneless skinless chicken breast halves -- cut in 1" pieces
1 med onion -- chop/rinse/pat dry
1 10 oz can diced tomatoes with green chiles
1 8 oz can tomato sauce
3 cups cooked rice
1 15 oz can ranch-style pinto beans
1 tbsp hot salsa
OPTIONAL GARNISHES
1 tsp jalapeno peppers -- chopped
1 tsp scallions -- chopped
1 tbsp fat free sour cream
2 tbsp cilantro leaves -- chopped

Heat oil in large skillet over medium-high heat.Add chicken; cook and stir 3-5 minutes. Add onion; cook, stirring occasionally, 3-5 minutes or until onion is tender.

Reduce heat to medium, add tomatoes with chiles and tomato sauce; simmer 3 minutes. Stir in rice and beans and salsa until combined and thoroughly heated.

Serve garnished with a dollop of sour cream and some jalapeno, scallions and cilantro on top.
