Baked “Stuffed” Potato Casserole 
10 medium potatoes 
1 block Cheddar cheese 
about 1/4 c butter 
1 (16 oz.) sour cream 
Boil potatoes with skins on, remove from water and let cool completely. 
Grate potatoes and then grate cheese. Stir together all ingredients and place in a 9 x 13 baking dish. Save some cheese to melt on top. 
Bake at 325 degrees for 45 minutes
