Broccoli Casserole
 
1 cup cooked rice 
1 cup cheddar cheese 
4 tsp. margarine 
1/4 tsp. salt 
1/2 cup diced onion 
1/4 cup skim milk 
2 (10 oz.) pkg. Frozen chopped broccoli   
dash pepper 
2 tbsp. oil or use vegetable oil spray 
Combine all ingredients except for the broccoli in a saucepan and simmer until cheese melts. Stir frequently. Add the broccoli and cook an additional 2-3 minutes. Oil or spray a 2-quart casserole, spoon in mixture and bake at 350 degrees F. for 20-30 minutes.

2 (10 oz.) pkgs. frozen chopped broccoli 
2 cups cooked rice 
2 cups shredded cheddar cheese -- sharp 
4 eggs -- slightly beaten 
4 tablespoons margarine 
1 cup milk 
4 tablespoons onion -- chopped 
2 teaspoons salt 
Cook broccoli according to package directions; drain. Combine remaining ingredients and cook over moderate heat until slightly thickened. Place broccoli in greased shallow 1 quart casserole. Pour sauce over broccoli. Bake at 350F for 20-25 minutes or until set.
