Broccoli Casserole

2 packages 10-oz frozen chopped broccoli
1 (10 3/4 oz.) can cream of mushroom soup
3/4 - 1 cup mayonnaise (use 1 C if you prefer a creamier casserole)
1 small onion, finely chopped
2 eggs, beaten
salt and pepper to taste
1 cup shredded sharp cheddar cheese
2 cups bread crumbs (see note)
3/4 stick butter, melted


Preheat oven to 350 degrees F. Cook broccoli according to package directions; drain well.

Combine soup, mayonnaise, salt and pepper, onion, and eggs in large bowl. Stir in broccoli and 1/2 cup of the cheese. Put into a greased 2-quart casserole dish. Sprinkle remaining cheese on top. Bake in a 350 oven for 20 minutes. Mix together bread crumbs with the melted butter. Sprinkle over casserole and bake for an additional 20 minutes or until hot and bubbly.

NOTE: This recipe was tested using both commercial store bought bread crumbs and homemade bread crumbs and have found that it is infinitely better with the homemade variety. To make bread crumbs, dice soft French bread into small cubes, spread into a single layer on cookie sheet, and bake in a 375 oven for about 10 minutes. Once the bread crumbs are dry and crumbly, put into a zip-lock bag and crush into crumbs.
