Shirley's Cheesy Zucchini Casserole
3 c diced raw zucchini
l-l/2 c crushed pork rinds
3 beaten eggs
l/2 c chopped green onion
3/4 c water
l/4 c heavy cream
l c shredded cheddar cheese
l stick melted butter
Mix all ingredients and bake uncovered in a 2 qt casserole at 325 for about an hour.
