Cranberry and Sweet Potato Casserole

5 sweet potatoes, cooked and cooled
grated rind of 1 orange
1/2 c. orange juice
1/4 c. dark brown sugar
1 c. whole cranberries
1/8 tsp. salt


Grease a 10 x 6 x 2-inch shallow baking dish. Cut potatoes in half lengthwise and arrange on the bottom of the dish.

Combine the rind, juice and sugar with the salt and pour over the potatoes. Pour the cranberries over the potatoes.

Place in a preheated 375 degrees oven and bake for 30 minutes.
