Mom's Super Potato Casserole.
6 potatoes, cooked with jackets on
2 cups Cheddar cheese, shredded
1/4 cup butter, melted
1/3 cup green onions, chopped - tops too
1/2 teas. salt
1/4 teas. pepper
2 cups sour cream, room temperature
2 Tbls. butter
Peel cooked potatoes and coarsely shred them. (cold potatoes shred easier, so I try to cook them the day before) Add cheese and melted butter. Mix lightly. Add onion, salt, pepper and sour cream. Mix lightly. Place all in an oven proof dish, dot with the 2 Tbls. butter. Bake for 25
minutes at 350 degrees. 6-8 servings
Hint: don't use your food processor to grate the cooked potatoes - it makes a gummy mess.
