POTATO KUGEL 
1/4 c. rendered chicken fat or vegetable oil;divided 
1 c. chopped onions 
1 c. chopped leeks 
2 lb russet potatoes, peeled and grated coarsely 
2 T. fresh parsley 
4 eggs, beaten 
salt and pepper to taste 
Preheat oven to 400.
Heat 2 T. of the fat in a skillet. 
Add the onions and leeks and saute until golden. 
Remove, cool slightly, and mix with the potatoes, parsley, and the eggs in a mixing bowl. Season with salt and pepper. 
Place the remaining 2 T. of fat in the sides and bottom of a 13-by 8-inch casserole (or similar size) and bake for 50 minutes or until golden. 
You may want to brush more oil on top of the kugel during baking. Makes 6 to 8 servings.
