Vegetable Scallop

2 cups bite size vegetables (broccoli, zucchini, etc.)
1 small onion, chopped
3 eggs beaten
1 cup milk
1 cup grated cheddar cheese
1/4 cup chopped pimento
1 1/4 cups crushed crackers (saltines, etc.)
1/4 cup melted butter


Preheat oven to 375° F.

Semi-cook vegetables and onions until slightly tender.

Mix all other ingredients except butter.

Fold in vegetables and pour into buttered 1 1/2 quart casserole dish. Pour melted butter over top.

Bake for 40 minutes or until knife inserted in center comes out clean.

Serves 6
