Spinach Bake
Kugel: Spinach - pareve

2 Onions chopped 
1 lb. Mushrooms coarsely chopped 
8 carrots coarsely chopped 
1 zuchinni coarsely chopped 
40 oz. fresh spinach chopped 
1 Cup Matzah Meal 
6 to 9 eggs (you decide the consistency you'd like best) 
salt 
2 Telma chicken boullion cubes (or you can use veggie or onion) 
Heat oven to 325 -- Prepare 9 x 13 pan -- grease well. 
Saute onions, carrots, zucchini and mushrooms in 2 Tbl. oil for a few minutes until they just start to get a little soft. 
 
Combine all ingredients together in a big bowl. Mix thoroughly (hands work best!) 
Put into prepared pan. Bake 45 mins to 1 hour. Should be firm and set. 
This also freezes really well. 
(Andrea added: I think it would also work well if you wanted to add some grated cheese. I think Monterey Jack, Swiss or Mild Cheddar would work best.)
