Spinach-Rise Casserole
1 six ounce box long grain and wild rice cooked as directed.(Uncle Ben's) 
2 ten ounce packages frozen chopped spinach, thawed and drained. 
2 Cups Monterey Jack cheese grated 
1/4 cup butter melted. 
1/4 cup onion finely chopped 
3/4 teaspoon dry mustard 
Preheat oven to 350 . 
Mix all ingreadients. 
Put into a greased 2 quart casserole. 
Back about 40 minutes until hot. 
* I soften the onion in the butter in the microwave and I don't bother greasing the casserole.
