Sweet Potato Casserole

6 large sweet potatoes
6 Tbs brown sugar
2 eggs beaten
1/4 orange juice
2 Tbs butter, melted
1 teas. Vanilla
1/2 teas. Salt

Topping:
3 Tbs butter, solftened
1/2 cup brown sugar
3/4 cup chopped pecans

1. Bake sweet potatoes until very tender, 375 degrees, about 1 hour, 20 minutes. Remove and cool. Reduce heat
to 350 degrees.

2. When potatoes are cool enough to handle, cut them in half, scoop out flesh, and mash until smooth. You should
have about 4 cups. Stir in brown sugar, eggs, orange juice, butter, vanilla, and salt. Place in casserole.

3. To make topping, combine the butter, brown sugar, and pecans. Sprinkle over sweet potatoes. Bake for 30
minutes. Serve hot.

Yield 8 services, 390 calories per serving
