Tortilla Vegetable Casserole 
 
3-4 zucchini onion 
green pepper 
1 (7-oz.) Can diced green chilies
salt, pepper and ground cumin to taste. 
6 corn or flour tortillas, cut each into 6 wedges  
2 Tbl. Flour 
1 cup Sour cream 
3 cups Shredded cheese
Preheat oven to 350 degrees F.
Saute zucchini and green pepper.  Stir in green chilies, salt, pepper and cumin. Blend flour into sour cream. 
In 2 qt. casserole layer 1/2 tortillas, 1/2 of veggies, 1/2 of sour cream mixture, and 1/2 of cheese. Repeat layers. Bake uncovered at 350 for 30 or until done.
