Yummy Vegetable Casserole
 
1 (about 16 oz.) can shoepeg corn, drained 
2 (about 14 1/2 oz.) cans French style green beans, drained 
1 (10 3/4 oz.) can cream of celery soup 
3/4 cup shredded Cheddar cheese 
1/2 cup chopped celery 
1/2 cup chopped green pepper 
3/4 cup chopped onions 
8 oz. sour cream 
1 (8 oz.) small can water chestnuts, drained and chopped 
1 cup crushed cheese crackers 
1/2 stick butter, melted 
Preheat oven to 350° F.
Stir melted butter into crackers crumbs. Combine remaining ingredients and place in a casserole dish. Top with crumb mixture. 
Bake for 35-40 minutes. 
Note: The chopped ingredients should be in fairly small pieces, but not necessarily diced.
